Ma Casey'S Combination Crawfish Pasta - cooking recipe
Ingredients

1/2 c. flour
1 stalk celery
1 1/2 pt. half and half
1 lb. crawfish tails, peeled
1 stick margarine (butter)
1 onion, finely chopped
8 to 10 oz. fettuccine noodles
1 clove garlic
1/4 c. chopped parsley
1/4 c. Parmesan cheese
1/4 c. Romano cheese
1/2 bunch shallots (all parts), finely chopped
1 green pepper
seasoning to taste
Preparation

Melt butter; saute vegetables.
Add flour and cook for 5 minutes, stirring constantly.
Add crawfish, half and half and cheeses, being careful not to let mixture stick to bottom.
(It will burn easily.)
Add seasoning to taste.
Simmer on low heat for 15 minutes.
Serve on cooked pasta.
