Ingredients

3 medium size, ripe bananas
1/3 c. peanut or safflower oil
1 tsp. vanilla
1/8 tsp. salt
1/4 c. uncooked oat bran or creamy-style hot cereal
1 1/2 c. coarsely chopped, mixed dried fruits (dates, apricots, raisins, etc.)
1/2 c. chopped walnuts or almonds
Preparation

Preheat oven to 350\u00b0.
Grease 2 large cookie sheets.
Mash bananas in a large bowl until smooth; makes about 1 1/2 cups. Stir in oil, vanilla and salt.
Add oats, oat bran, mixed fruit and nuts, stirring well.
Drop by rounded tablespoonful onto cookie sheets about 1 inch apart and flatten out slightly with back of a spoon.
Bake for 20 to 25 minutes or until bottom and edges are lightly browned.
Transfer to cookie wire rack.
Cool and refrigerate.
