Blueberry Oatmeal Muffins(Yields 1 Dozen Muffins) - cooking recipe

Ingredients
    1 c. oatmeal (not instant)
    3/4 c. whole wheat flour
    3/4 c. unbleached flour
    1 Tbsp. baking powder
    1/4 tsp. nutmeg or try ground coriander
    1 tsp. cinnamon
    1 large egg, beaten
    1 c. milk (skim or reduce calories)
    2 Tbsp. margarine or butter, melted
    3/4 c. light brown sugar
    1 1/2 c. blueberries
    1/2 c. pecans (optional)
    1/4 c. oat bran (optional - increase milk by 1 Tbsp.)
Preparation
    Preheat oven to 400\u00b0.
    Grease the muffin tin or line with paper muffin cups.
    In a bowl, mix together all the dry ingredients.
    In a small bowl, mix together the egg, milk, margarine and brown sugar.
    Beat.
    Stir in blueberries and nuts. Pour the wet ingredients into the dry ingredients all at once and fold in until the dry ingredients are just moistened.
    Spoon batter into the muffin cups.
    Bake until lightly browned, about 12 minutes.
    Serve warm.
