Cheesy Eggplant Sticks - cooking recipe
Ingredients

1 eggplant
1/4 c. grated onion, pressed
1 1/2 to 2 c. grated Cheddar cheese
1/2 c. butter or margarine, melted
2 cloves garlic, minced or pressed
Preparation

Peel and quarter eggplant lengthwise. If using regular eggplant, cut into smaller wedges. Place on ungreased baking sheet. Mix butter, onion and garlic. Brush mixture on eggplant sticks. Broil eggplant about 5 to 7 minutes. Turn. Brush with butter. Broil 5 minutes longer. Sprinkle with cheese. Broil until cheese melts. Serve immediately.
