Nell'S Gumbo - cooking recipe

Ingredients
    1/2 c. oil
    1 c. flour
    1 small head cabbage
    dried onions or 3 large
    1 stalk celery
    1 bell pepper
    1 qt. tomatoes
    1 pt. okra
    2 gal. water (may use tomato juice)
    2 gal. shrimp, peeled
    2 lb. crabmeat
    gumbo file
    rice
    salt and pepper
Preparation
    Make roux using hot oil; add flour.
    Stir until color of copper penny.
    Add vegetables, except tomatoes and okra.
    Cook until onions are transparent.
    Add the water; let simmer at least 1 hour.
    Add shrimp.
    After 10 minutes, add crabmeat.
    Salt to taste; add pepper.
    Add chopped okra and tomatoes.
    Cook for at least 20 minutes.
    When ready to serve, add gumbo file to individual bowls (about 1/2 teaspoon).
    Pour gumbo in bowl and serve with rice.
