Ingredients

6 c. milk
1 c. regular long grain rice
1/2 c. sugar
1/4 tsp. salt
2 tsp. vanilla
1 c. heavy cream
1/4 tsp. nutmeg
Preparation

In large saucepan, combine milk, rice, sugar and salt over medium heat.
Heat mixture until tiny bubbles form around edge, stirring frequently.
Reduce heat to low.
Cover and simmer 1 1/4 hours or until rice is very tender, stirring occasionally.
Stir in vanilla.
Pour into serving dish.
Cover surface of pudding with plastic wrap.
Refrigerate until well chilled, at least 3 hours or overnight.
