Stuffed Zucchini - cooking recipe

Ingredients
    3 medium zucchini
    1 medium onion, chopped
    1/2 stick margarine
    1 small green pepper, chopped
    1 c. herb seasoned stuffing mix
    1/2 c. shredded Mozzarella cheese
    1 (2 oz.) jar diced pimientos, drained (optional)
Preparation
    Heat 2 inches of water to boil.
    Add zucchini.
    Cover; heat to boiling.
    Cook 8 to 10 minutes or until tender; drain.
    Cool slightly.
    Cut zucchini lengthwise in half.
    Spoon out pulp; chop pulp coarsely.
    Place zucchini shells, cut sides up, in ungreased rectangular baking dish.
