Mushroom Bisque - cooking recipe

Ingredients
    1/2 stick butter or margarine
    4 shallots, chopped fine
    1 lb. thin sliced fresh mushrooms or 1 large jar
    1 Tbsp. all-purpose flour
    2 c. chicken broth
    1 pt. half and half
    dash of nutmeg
    1 c. crabmeat, drained
    salt and pepper to taste
Preparation
    Melt butter in saucepan; add onion and mushrooms; saute until tender.
    Add flour, stir constantly until smooth.
    Continue cooking for 1 minute.
    Combine chicken broth, half and half and nutmeg; gradually add to mushroom mixture, stirring constantly. Stir in remaining ingredients, reduce heat.
    Cook until thoroughly heated, stirring frequently.
    Do not boil!
    Makes 8 cups.
