Junior League Tea Room Eggplant Supreme - cooking recipe

Ingredients
    1 lb. ground beef
    1 onion, chopped
    1 medium eggplant
    1 (1 lb.) can Spanish rice
    1 (1 lb. 13 oz.) can tomatoes
    2 oz. can mushrooms, drained
    1 c. grated Cheddar cheese
Preparation
    Brown beef and onion.
    Drain.
    Peel and dice eggplant.
    Cook in boiling salted water until tender.
    Drain.
    Mix ground beef, eggplant, Spanish rice, tomatoes and mushrooms.
    Pour into a greased 1 1/2-quart casserole.
    Sprinkle with cheese.
    Bake at 350\u00b0 for 1 hour or until golden brown.
