Chicken Ala King - cooking recipe

Ingredients
    1/3 c. chicken fat or butter
    1/2 c. green peppers, in thin strips
    1 c. mushrooms, sliced
    4 Tbsp. flour
    1 c. chicken stock
    1 c. milk
    1/2 c. cream
    1/2 c. pimento
    2 to 3 c. diced chicken
    salt and pepper
    2 egg yolks, slightly beaten
    2 to 3 Tbsp. sherry (optional)
Preparation
    Heat fat.
    Add green peppers and mushrooms.
    Cook over low heat 5 minutes or until soft.
    Add flour and stir until blended; slowly add stock and milk. Stir on low heat until smooth and thick.
    Add cream, pimento, chicken and season to taste.
    Heat thoroughly.
    Into slightly beaten egg yolks, stir a little of the hot sauce.
    Slowly add the remaining sauce, stirring constantly. Add sherry.
    Serve immediately on hot toast.
