Pineapple Cream Cake - cooking recipe

2 c. sugar
3/4 c. vegetable oil
2 eggs, beaten
1 (20-oz.) can crushed pineapple
2 c. flour
1 tsp. baking soda
3/4 tsp. salt
1 tsp. vanilla
8 oz. cream cheese
1/2 stick butter
2 Tbsp. pineapple juice
2-3 c. sifted powdered sugar
Preparation

Cream sugar and oil together; add eggs.
Drain pineapple and save 2 tbsp. juice for the icing.
Add remaining juice and pineapple to creamed mixture.
Sift together flour, soda and salt. Add to pineapple mixture with the vanilla.
Pour into greased 9 x 13 pan and bake at 350 degrees for 30-45 minutes.
For icing, melt cream cheese and butter over low heat.
Add reserved pineapple juice and enough powdered sugar to make spreadable.
Beat well to remove any lumps.
Pour over hot cake.
