Ingredients

Beets
2 Tbsp. salt
2 c. vinegar
3 c. water
2 1/2 c. sugar
Preparation

Wash and cook beets.
Remove skin.
Slice or quarter beets. Heat salt, vinegar, water, and sugar until salt and sugar dissolves.
Add beets.
Heat just to boiling.
Pack in hot jars and seal.
