Pumpkin Pie - cooking recipe

Ingredients
    2 c. pumpkin
    1 pt. milk, scalded
    2 eggs
    3/4 c. sugar
    2 tsp. cinnamon
    2 tsp. ginger
    1/2 tsp. salt
    2 tsp. lemon extract
    2 Tbsp. butter, melted
Preparation
    Add the scalded milk to the beaten eggs in which sugar and spices have been mixed.
    Stir in the pumpkin, lemon juice and melted butter.
    Pour into an uncooked pie shell which has been brushed with white of egg.
    Place in 500\u00b0 oven until the pastry is glazed, then reduce the heat to moderate (375\u00b0).
    Bake for 45 minutes.
