Plum Oatmeal Bread - cooking recipe
Ingredients

2 c. all-purpose flour
2/3 c. sugar
1 Tbsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1 c. quick cooking oats
1 (16 oz.) can purple plums, drained (reserve 3/4 c. juice), pits removed and plums chopped
1 egg
1/4 c. vegetable oil
Preparation

In mixing bowl, combine flour, sugar, baking powder, cinnamon, salt and oats.
Stir chopped plums in flour mixture to coat well. Combine 3/4 cup plum juice, egg and oil; add to flour mixture, stirring just until dry ingredients are moistened.
Pour into greased loaf pan.
Bake in a preheated 350\u00b0 oven for 1 hour, or until toothpick inserted in center comes out clean.
Cool on wire rack 10 minutes.
Remove from pan; cool completely.
Yields 1 loaf.
