Barbecue Chicken And Rice - cooking recipe
Ingredients

1 envelope dry onion soup mix
3/4 c. uncooked regular or long grain rice
1 (3 lb.) fryer chicken, cut up
1/2 c. barbecue sauce
1 1/2 c. water
1 (4 oz.) can sliced mushrooms, drained
1 (4 oz.) can cut up pimentos, drained
1/2 tsp. salt
1/2 tsp. pepper
Preparation

Mix dry onion soup mix and uncooked rice.
Spread evenly in bottom of shallow 2-quart baking dish. Arrange chicken pieces over rice. Combine barbecue sauce and water.
Pour over chicken. Sprinkle mushrooms and pimentos over top.
Season with salt and pepper. Cover and bake at 350\u00b0 for 1 1/2 hours.
Remove cover and continue baking 1/2 hour longer until chicken is tender and brown. Serves 4.
