Eggplant Patties - cooking recipe

Ingredients
    1 pt. mashed eggplant
    1 medium onion, chopped in blender
    1 egg
    2 Tbsp. self-rising flour
    1 Tbsp. self-rising cornmeal
    1 tsp. salt
Preparation
    Parboil eggplant until soft enough to mash.
    Add drained, chopped onion and remainder of ingredients.
    Beat well together. Drop in patties into skillet with hot Crisco and cook until done. Place on towel to drain.
    Makes 15 to 20 patties.
