Funnel Cakes - cooking recipe

Ingredients
    2 eggs
    1 c. milk
    2 c. flour
    1/4 c. sugar
    dash of salt
    1/2 tsp. baking powder
    peanut oil (for frying)
    powdered sugar
Preparation
    Beat eggs. Add milk and sugar, then mix well. Combine flour, salt and baking powder, then add to wet ingredients and mix. Place 1 1/2-inches of oil in a frying pan and heat until hot (about 10 minutes). Using 1 cup of batter at a time, pour through funnel into the oil, making a crisscross pattern. When both sides are golden brown, put on a paper plate and sprinkle with powdered sugar. Recipe makes about 8 good-sized cakes.
