Mexican Stuffed Potatoes - cooking recipe

4 potatoes
1/2 tsp. garlic
4 Tbsp. butter or margarine
2 small green chiles, chopped
2 cilantro strips, chopped
2 c. grated Cheddar cheese
Preparation

Preheat oven to 400\u00b0.
Wash and dry potatoes.
Wrap potatoes in foil and bake for 45 minutes or until fork-tender.
Remove potatoes from foil and cut in half.
Remove potato from skin and mash.
Save skins.
Combine garlic, salt, butter, green chiles, cilantro and cheese into potatoes and mix well.
Return mixture to potato skins.
Sprinkle more cheese on top and bake for 15 minutes.
Makes 8 servings.
