Carrot Pineapple Cake - cooking recipe
Ingredients

2 c. sugar
1 1/2 c. cooking oil
4 eggs
2 c. flour
1 1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. baking powder
2 c. finely grated carrots
3/4 c. chopped nuts
1 c. coconut
1 (8 1/4 oz.) can crushed pineapple (undrained)
Preparation

Heat oven to 325\u00b0.
Grease and lightly dust with flour two 9-inch square pans or three 8-inch round pans.
Sift together flour, salt, baking powder, soda and cinnamon.
Combine oil, sugar and eggs; beat thoroughly.
Add flour mixture and beat.
Fold in carrots, nuts and pineapple.
Pour batter into pans.
Bake until cake begins to pull away from sides of pan, about 1 hour.
Cool 15 minutes and remove from pans.
Frost with frosting following.
