Sauteed Mustard Greens - cooking recipe

Ingredients
    1 c. thinly sliced onions
    2 Tbsp. olive oil
    2 lb. mustard greens, washed and torn into large pieces (fresh spinach may be substituted)
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    In a large saute pan, heat olive oil over medium heat.
    Add onions and saute until onions begin to turn brown and caramelize, about 5 to 10 minutes.
    Add mustard greens and briefly cook until mustard is wilted.
    Season with salt and pepper.
    Makes 8 servings.
