Ingredients
    2 c. maple syrup
    2 c. fresh corn kernels
    1/2 c. corn meal
    2 Tbsp. all-purpose flour
    1/2 tsp. salt
    1 1/2 tsp. canola oil
    3/4 c. low-fat buttermilk
    1 egg (Egg Beaters)
Preparation
    In a small saucepan, heat the syrup and 1 cup of the corn kernels over low heat until the corn is tender and the mixture is heated through, 10 to 15 minutes.
