Cranberry Chicken - cooking recipe
Ingredients

1 Tbsp. butter or margarine
1 small onion, chopped
3 lb. chicken thighs, skin removed
2/3 c. ketchup
1/3 c. brown sugar
1 Tbsp. cider vinegar
1 tsp. dry mustard
1 1/2 c. fresh or frozen cranberries, rinsed
Preparation

Place butter and onion in a 10 x 15-inch baking pan.
Roast onion, uncovered, in a 400\u00b0 oven until pale gold, 10 to 15 minutes, stirring occasionally.
Push onion to one section of pan, then place thighs, side by side in pan, but not on onion.
Bake, uncovered, 25 minutes longer.
In a bowl, stir together ketchup, sugar, vinegar, mustard and cranberries.
Remove chicken from oven and scoop browned onions from pan and stir them into cranberry mixture.
Space chicken evenly in pan and spoon cranberry mixture over thighs. Bake until mixture is slightly caramelized and chicken is no longer pink at bone in thickest part (cut to test), about 20 minutes.
