Fresh Vegetable Basil Soup - cooking recipe
Ingredients

3 Tbsp. butter or margarine
1 large stalk celery, sliced
1 large potato, peeled and cubed
4 c. vegetable stock *
1/2 small head cauliflower, broken into flowerets
2 small zucchini, sliced
salt and pepper
Parmesan cheese
1 medium onion, chopped
1 large carrot, sliced
2 large tomatoes, peeled and diced
3 Tbsp. coarsely chopped fresh basil or 1 tsp. dried basil
1/2 lb. fresh green peas or 8 oz. frozen peas
Preparation

Melt butter.
Add onion, celery and carrot.
Cook until soft (about 10 minutes).
Add potato, tomatoes, vegetable stock and basil.
Bring to a boil.
Cover and simmer 15 minutes.
Add cauliflower and zucchini.
Simmer for 10 more minutes.
Add peas. Simmer another 5 minutes or until all vegetables are tender. Serve with Parmesan cheese.
