Scallops Exceptional - cooking recipe

Ingredients
    1 lb. large scallops, drained
    2 c. broccoli flowerets
    1 c. red pepper strips
    1 garlic clove, minced
    2 tsp. basil
    4 Tbsp. margarine
    1/2 lb. Velveeta, cubed
    2 Tbsp. dry sherry (optional)
    4 c. cooked rice
Preparation
    Saute broccoli, peppers, garlic and basil in margarine.
    Add scallops; continue cooking for 2 to 3 minutes or until tender. Stir in Velveeta cheese and sherry; continue heating until cheese is melted.
    Serve over rice.
    (Also works well with shrimp.)
