Brown Rice-Vegetable Saute - cooking recipe

Ingredients
    vegetable cooking spray
    2 carrots, chopped
    1/2 c. onions, chopped
    1 c. brown rice, uncooked
    1 tsp. bouillon (beef)
    1 c. sliced fresh mushrooms
    2 Tbsp. grated Parmesan cheese
    1/4 tsp. pepper
    1 tsp. margarine
    2 c. water
    1/4 c. sherry
Preparation
    Heat margarine in a large skillet. When melted, add carrots and onions. Saute. Add rice. Cook over low heat 1 minute, stirring constantly.
    Add water, sherry, bouillon and pepper. Cover. Simmer 45 minutes to absorb liquid.
    Transfer to a bowl. Set aside and keep warm.
