Little Nothings - cooking recipe

Ingredients
    1/2 c. fruit preserves or marmalade
    16 slices sandwich bread, crust removed
    3/4 c. buttermilk pancake and waffle mix
    1 tsp. sugar
    1/4 tsp. nutmeg
    1 egg
    3/4 c. milk
    hot vegetable oil
    powdered sugar
Preparation
    Spread preserves over each slice of bread.
    Roll up, jelly roll fashion.
    Tightly wrap each bread roll in plastic wrap. Chill for several hours or overnight.
    Combine pancake mix, sugar and nutmeg; mix well.
    Add egg and milk, mixing until smooth.
    Dip each bread roll into batter.
    Deep-fry in hot oil until golden brown.
    Drain on paper towels; sprinkle with powdered sugar. Serve warm with additional preserves or marmalade, if desired. Yield: 1 1/2 dozen.
