Eggplant Oriental - cooking recipe
Ingredients

2 eggplant, peeled and cubed
1/2 c. olive oil
1 medium onion, minced
2 cloves garlic, minced
1/3 c. parsley
2 green bell peppers, chopped
1 can Italian tomatoes
3 Tbsp. tomato paste
1 tsp. basil
1 tsp. oregano
1/4 tsp. coriander
3 Tbsp. ketchup
3 Tbsp. chili sauce
Preparation

Preheat oven to 300\u00b0.
Bake the eggplant for 30 minutes until soft.
In the oil, saute onion, garlic, parsley, bell peppers and tomatoes.
Add spices.
Cook for 20 to 30 minutes.
Add tomato paste, ketchup, chili sauce and eggplant.
Cook for 20 more minutes.
Puree in a blender; serve warm with tortilla chips.
