Brazilian Pickled Onions - cooking recipe

Ingredients
    1 large onion, sliced crosswise into about 1/4-inch slices (should make about 2 c.)
    3 Tbsp. olive oil
    2 Tbsp. cider vinegar
    3 Tbsp. hot pepper sauce (e.g., Tabasco)
Preparation
    In a heat-proof bowl, cover onion rings with boiling water for 15 seconds; drain immediately and cool with cold water.
    Drain again.
    Mix the other three ingredients and beat with a fork. Pour over onion rings and toss.
    Let sit at least 1/2 hour at room temperature.
    Do not refrigerate.
