Carrot Fritters - cooking recipe

Ingredients
    1 cup carrots, shredded
    1 cup potato, shredded (about 1 medium potato)
    1 small chopped onion
    2 beaten eggs
    2 Tbsp. flour
    salt and pepper
    1 Tbsp. parsley
Preparation
    Peel or scrape carrots, trimming both ends.
    Cut lengthwise into halves or in quarters, depending on size.
    Cook covered, in salted water with a teaspoon of sugar, until fork tender.
    Drain. Place in a baking dish and sprinkle with brown sugar* and bake in oven at 400\u00b0 until nicely glazed, about 15 minutes. Serve.
