Marinated Mushrooms And Peppers - cooking recipe

Ingredients
    1 lb. small fresh mushrooms
    1 c. white vinegar
    1 (7 1/2 oz.) jar sweet roasted peppers, diced
    1/3 c. diced celery
    1/3 c. olive oil
    2 cloves garlic, sliced lengthwise
    1 1/2 tsp. oregano leaves
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Clean and trim mushrooms.
    In saucepan, combine vinegar and mushrooms.
    Bring to a boil.
    Cover and simmer 3 minutes.
    Drain mushrooms; turn into large bowl.
    Add remaining ingredients and mix gently.
    Cover and refrigerate 12 hours or longer.
    Yields 1 quart.
