Caldillo - cooking recipe
Ingredients

1 round steak (about 1 1/2 lb.), cubed
2 Tbsp. fat (shortening or bacon grease)
2 cloves garlic, chopped
1 onion, chopped
1/2 c. tomatoes (fresh or canned)
3 potatoes, cubed
1 small chopped green chiles (optional)
Preparation

Brown round steak in fat until it is very brown.
Browning a long time makes a darker richer, broth.
Add garlic, onion and tomatoes.
Add 1 1/2 quarts water and salt to taste.
Simmer until meat is tender, about 1 to 1 1/2 hours.
When meat is done, add cubed potatoes.
If desired, add chopped chiles.
Cook until potatoes are done.
Serve in bowls, since the Caldillo is very soupy.
