Georgia Peach Bread Recipe - cooking recipe

3 c. sliced fresh peaches
2 c. all-purpose flour
1/4 tsp. salt
1 tsp. ground cinnamon
2 eggs
1 c. finely chopped pecans
6 Tbsp. sugar
1 tsp. soda
1 1/2 c. sugar
1/2 c. shortening
1 tsp. vanilla
Preparation

Place peaches and 6 tablespoons sugar in blender and process until pureed (mixture should yield about 2 1/4 cups).
Combine flour, baking soda, salt and cinnamon; set aside.
Cream 1 1/2 cup sugar and shortening well.
Add eggs and mix well.
Add peach puree and dry ingredients; stir until moistened.
Stir in nuts and vanilla.
Spoon batter into 2 well-greased and floured 9 x 5 x 3-inch loaf pans.
Bake at 325\u00b0 for 55 to 60 minutes or until done.
Cool 10 minutes in pan, then turn on rack and cool completely.
Yields 2 loaves.
