Ingredients

1 c. apple cider
1/2 c. sugar
1/2 tsp. salt
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 eggs, separated
3 c. hot milk
1/2 c. whipping cream, whipped
Preparation

Combine cider, sugar, salt, cinnamon, nutmeg and egg yolks. Mix in blender until sugar is dissolved.
Add milk to mixture slowly.
Beat egg whites until stiff peaks form.
Pour milk slowly over egg whites; fold together.
Serve hot topped with whipped cream.
Yields 1 quart.
