Dottie'S Cranberry Souffle Salad - cooking recipe

Ingredients
    1 pkg. unflavored gelatin
    2 Tbsp. sugar
    1/4 tsp. salt
    1 c. very hot water
    1/2 c. mayonnaise
    2 Tbsp. lemon juice
    1 tsp. rind
    1 (1 lb.) can whole cranberry sauce
    1 orange or apple, peeled and diced or 1 (8 1/2 oz.) can pineapple tidbits
    1/4 c. chopped nuts
Preparation
    Mix gelatin with sugar and salt; add hot water.
    Stir until dissolved.
    Add mayonnaise, lemon juice and rind.
    Blend with rotary beater.
    Pour into refrigerator tray and quick chill in freezer until firm, about 1-inch from edge, but still soft in center (10 to 15 minutes).
    Beat until fluffy.
    Fold in cranberry sauce, fruit and nuts.
    Pour into molds and chill until firm. Unmold on lettuce.
    Top with mayonnaise.
    Makes 6 to 8 servings.
