Joe'S Shrimp Marsala - cooking recipe

Ingredients
    1 lb. fresh raw shrimp (use nice size)
    2 eggs
    flour to coat
    1/2 stick (1/8 lb.) or more, if needed, butter
    1/2 c. or more, if needed, olive oil
    6 to 8 oz. Marsala wine
    1 bunch scallions (green onions), washed and cut into 1/4-inch pieces
    1/4 lb. Prosciutto ham, cut in small pieces (like 1/2 x 1/2-inch or so)
Preparation
    Remove shells from shrimp and butterfly them.
    Dip in beaten eggs.
    Dredge in flour and gently shake off excess flour.
