Banana Bread - cooking recipe

1/3 c. shortening
2/3 c. sugar
2 eggs, slightly beaten
1 3/4 c. sifted flour
2 3/4 tsp. baking powder
1/2 tsp. salt
1 c. mashed ripe bananas
1/2 c. chopped nuts (optional)
Preparation

Beat shortening until creamy, 2 minutes, at medium speed on mixer.
Gradually add sugar; beat until light and fluffy.
Add eggs and beat until thick and pale color.
Sift dry ingredients. Add alternately with bananas.
Beat thoroughly after each addition.
Grease the bottom only of a 4 1/2 x 8 1/2 x 3-inch loaf pan.
Bake at 350\u00b0 for 60 to 70 minutes.
