Texas Stew - cooking recipe

Ingredients
    1 1/2 lb. pork tenderloin
    1 large onion, chopped
    2 cans chicken broth
    2 cans Ro-Tel tomatoes with chilies
    1 can whole kernel corn
    1 can black beans, drained and rinsed
    1 tsp. chili powder
    1/4 tsp. dried oregano leaves
Preparation
    Trim pork of all fat.
    Place in a large saucepan with onion and chicken broth.
    Bring to a boil; reduce heat and simmer for 2 to 2 1/2 hours or until meat is tender.
    Refrigerate and skim off any congealed fat.
    Add remaining ingredients.
    Bring to a boil over medium heat. Simmer 15 to 20 minutes. Serve with jalapeno cornbread wedges.
