Tomato-Mozzarella Salad - cooking recipe

Ingredients
    1/4 c. red wine vinegar
    1/2 tsp. minced garlic
    1/2 tsp. salt
    pepper to taste
    2/3 c. olive oil
    6 oz. Mozzarella cheese, cut in 1/2-inch cubes
    1 pt. cherry tomatoes, halved
    1/4 c. chopped red onion
    3 Tbsp. chopped fresh basil or 1 Tbsp. dried
Preparation
    Mix vinegar, garlic, salt and pepper.
    Slowly pour in oil, stirring constantly with fork until well blended.
    Add tomatoes, cheese, onion and basil; toss to mix.
    Cover and refrigerate up to 2 days.
    Stir occasionally.
