Lentil Salad - cooking recipe

Ingredients
    1 lb. lentils
    1 c. sun-dried tomatoes, coarsely chopped
    1 c. walnuts, coarsely chopped
    1/2 c. onions, finely chopped
    1 tsp. salt
    4 cloves garlic, finely chopped
    1/2 c. vinegar
    1/4 c. oil
    1/4 c. chili powder
    2 tsp. oregano
Preparation
    Soak and cook lentils according to package directions.
    Drain and add other ingredients while still warm.
    Stir.
    Let sit for twenty minutes, so the tomatoes have time to soften and absorb some of the liquid before serving.
    This keeps well.
    I bring this to potluck dinners because it is safe unrefrigerated for hours and there are always people who appreciate a low-fat selection.
