Fresh Vegetable Nicoise - cooking recipe

Ingredients
    1/2 lb. green beans
    1 medium onion, cut into 6 wedges
    1 clove garlic, minced
    1 Tbsp. olive or salad oil
    1 yellow pepper, cut into 8 wedges
    1 large tomato, cut into 8 wedges
    1/4 c. black ripe olives
    1/2 tsp. salt
    1/8 tsp. pepper
    2 Tbsp. red wine vinegar
Preparation
    In microwave in a 2-quart casserole, cook green beans in 1/4 cup water, covered, on High 4 to 6 minutes or until slightly softened.
    Stir halfway through cooking.
    Drain and stir in onion, garlic and oil; cook, covered, 3 minutes.
    Stir in yellow pepper and cook, covered, 2 to 4 minutes or until vegetables are tender and crisp.
    Add tomato; cook, uncovered, 1 minute.
    Stir in olives and remaining ingredients.
    Serve hot or cold.
    Yields 4 servings.
