Veal With Olive Sauce - cooking recipe

Ingredients
    4 veal chops (1/2-inch thick)
    salt and pepper
    enriched flour
    2 Tbsp. fat (vegetable shortening)
    1/2 tsp. paprika
    1 Tbsp. chopped onion
    2 Tbsp. lemon juice
    1 c. water
    2 Tbsp. enriched flour
    1/2 tsp. salt
    1/4 c. sliced stuffed green olives
Preparation
    Sprinkle chops with salt and pepper; dip in flour.
    Slowly brown chops on both sides in hot fat; remove chops.
    Blend the 2 tablespoons flour into fat.
    Add salt, paprika, onion and lemon juice.
    Add water.
    Cook and stir until mixture thickens.
    Return chops to skillet.
    Cover and simmer until tender, about 20 minutes. Add olives; cook, uncovered, 5 minutes.
    Makes 4 servings.
