Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    2 tsp. baking soda
    1/2 tsp. salt
    2 tsp. cinnamon
    1 1/4 c. sugar
    2 c. grated carrots
    1/2 c. raisins
    1/2 c. chopped nuts
    1 apple, peeled, cored and grated
    1/2 c. coconut
    3 eggs
    1 c. salad oil or canola oil
    2 tsp. vanilla
Preparation
    In a large bowl, mix dry ingredients.
    In a separate bowl, beat oil, eggs and vanilla. Add all others. Bake at 350\u00b0 for 20 minutes.
    Makes 18 to 24 muffins.
