Spinach Madeline - cooking recipe
Ingredients

4 pkg. frozen chopped spinach
1 stick butter or margarine
4 Tbsp. flour
4 Tbsp. chopped onion
1 c. evaporated milk
1 c. vegetable liquor, drained from spinach
1 Tbsp. black pepper
2 tsp. celery salt
2 tsp. garlic salt
12 oz. roll jalapeno cheese
1 tsp. Tabasco or less to taste
Preparation

Cook spinach according to directions on package.
Drain well and save liquor.
Melt butter in saucepan over low heat.
Add flour, stirring, until blended and smooth, but not brown.
Add onion; cook slowly until soft.
Add liquid slowly, stirring constantly to avoid lumps.
Cook until smooth and thick.
Add cheese (cut in small pieces) and seasonings.
Stir until cheese melts.
Combine with cooked spinach.
Pour into 9 x 13-inch casserole dish sprayed with Pam.
Top with buttered bread crumbs. Store in refrigerator overnight.
Bake at 325\u00b0 for 25 minutes or until bubbly.
