Tzimmes - cooking recipe

Ingredients
    3 to 4 lb. short ribs or brisket
    2 to 3 large onions, coarsely chopped
    2 lb. scraped carrots, cut in chunks
    2 lb. peeled sweet potatoes, cut in chunks
    3 to 4 fresh pears, peeled and cubed
    salt to taste
    brown sugar to taste
    Potato Kneidlach (dumplings; see recipe)
Preparation
    Cook meat (if using brisket cut in large chunks) and onions in salted water to cover approximately 3 hours.
    When meat is tender add carrots, sweet potatoes and pears, discarding stems and seeds. Cook 1 hour longer.
    Add brown sugar (1/2 cup or more). Turn out meat/vegetable mixture into large baking/roasting pan with liquid from cooking to cover.
    Top with Kneidlach (dumplings).
    Bake, uncovered, at 300\u00b0 for 3 to 4 hours.
