Ingredients

3 eggs, well beaten
1/2 c. sugar
1 tsp. vanilla
1/2 tsp. salt
1 c. maple syrup
1 Tbsp. butter, melted
1 (7 oz.) pkg. coconut
Preparation

Beat eggs slightly with sugar.
Add vanilla and salt.
Mix well.
Pour in syrup and melted butter.
Blend thoroughly.
Spread coconut in 9-inch pie shell (unbaked).
Bake at 425\u00b0 for 10 minutes.
Reduce heat to 350\u00b0.
Bake until pie puffs in the middle and a silver knife inserted in the center comes out clean.
Yields 8 servings.
