Vegetable Pie(Makes 6 To 8 Servings) - cooking recipe

Ingredients
    4 to 6 Tbsp. seasoned dry bread crumbs
    1 (24 oz.) pkg. frozen shredded potatoes, thawed
    1 large onion, peeled and chopped
    2 1/2 c. shredded Swiss cheese, divided
    4 Tbsp. butter or margarine, melted
    1 tsp. Italian seasoning, divided
    salt and freshly ground pepper to taste
    2 Tbsp. olive oil
    1 medium zucchini or 2 small yellow crookneck squash, thinly sliced
    1/2 lb. fresh mushrooms, sliced
    3 medium tomatoes, peeled, seeded, cut into chunks
    2 Tbsp. grated Parmesan cheese
Preparation
    Generously butter a 10-inch pie plate or quiche dish. Sprinkle bread crumbs on bottom and up the sides of the dish. Shake out excess crumbs; set dish aside.
