Zucchini Nut Bread - cooking recipe

Ingredients
    3 eggs, beaten
    2 c. sugar
    3 c. flour
    1 tsp. soda
    1 tsp. salt
    1 tsp. baking powder
    1 tsp. cinnamon
    1 c. oil
    2 tsp. vanilla
    3 c. raw zucchini, grated
    1 1/2 c. nuts
    1/2 c. coconut (optional)
Preparation
    Combine all ingredients and mix well.
    Make 2 loaves or one 9 x 13-inch cake.
    Bake at 350\u00b0 for 1 hour and 10 minutes.
    Bake 30 to 35 minutes for 6 small loaf pans.
    Check with toothpick for doneness.
