Adils' Eggplant Yoghurt - cooking recipe

Ingredients
    1 medium sized eggplant
    2 Tbsp. vegetable oil
    1/4 c. chopped onions
    1 tsp. salt
    1 Tbsp. garam masala
    1 small tomato, chopped
    1/4 c. fresh coriander
    1 c. plain yoghurt
Preparation
    Preheat oven to 400\u00b0.
    With knife, make 5 or 6 deep slits in the eggplant and place in a shallow baking dish.
    Roast for 45 minutes.
    When eggplant is cool, peel and chop the pulp.
