Red Pepper Sauce - cooking recipe

Ingredients
    1 Tbsp. extra Virgin olive oil
    1 medium onion, finely chopped
    2 c. red bell peppers, seeds and white veins removed, chopped fine
    1/4 tsp. salt
    1/4 tsp. freshly ground black pepper
    1 c. chicken stock
Preparation
    Heat oil in skillet.
    Add vegetables, do not brown! Simmer until soft.
    Add salt and pepper.
    Stir, add broth and simmer, uncovered, for 15 minutes.
    Cool, put in blender and puree.
    Put back in pan, simmer 15 more minutes or until slightly thickened. Makes about 1 1/3 cups.
