Mock Crab Salad(Made With Parsnips And Pimiento) - cooking recipe

Ingredients
    2 raw parsnips
    1 c. diced celery
    1 minced onion
    1 pimento, chopped
    8 or 9 ripe olives
    Thousand Island dressing
Preparation
    Peel parsnips and grind coarsely.
    Add celery, onion, chopped pimiento and olives.
    Sprinkle with salt and pepper.
    Add salad dressing.
    Chill and serve on lettuce.
